Dried apricot sheets (''leder'') filled with dried fruit and nuts for Tu B’Shevat
 
This dried apricot sheet, called "leder" in Middle Eastern countries, is a wonderful base for filling and rolling (similar to maki-zushi). A very tasty and attractive dish.

Ingredients:
2 dried apricot sheets
½ cup pitted dates
3 tablespoons mint leaves
3 tablespoons Sugat walnuts, crushed
3 tablespoons mixed Sugat sunflower and pumpkin seeds
2 tablespoons dried cranberries
 1 teaspoon cinnamon

Preparation:
1.  Spread the leder on a tray. Spread a thin layer of dates with nuts, seeds and cranberries. Spread some mint leaves all over  and season with cinnamon. Do not put too much filling, as the leder will not close.
2. Roll the leder and press well. Cut the roll in thin slices and arrange on a nice serving dish.
