Ingredients: ½ cup Sugat red lentils 1 purple onion, chopped 2 garlic cloves, chopped 1 sweet potato, sliced 2 carrots, sliced 1 zucchini, sliced 1 celery stalk, chopped 1 cup pumpkin squares 2 tablespoons olive oil 1 teaspoon ground ginger Salt and pepper 5 cups water
Preparation: 1. In a large pot fry the onions and garlic in olive oil until golden. Add the carrots and the celery. Stir. Add the rest of the vegetables and stir for 5 minutes. Add the water and bring to the boil. 2. When boiling, add salt, pepper and ginger. 3. Add the red lentils and cook over low heat until everything has softened - about 30 minutes. |
