Blue cheese is the general term for those soft cheeses with the blue veins, which is actually mould. Most blue cheese is made from cow's milk, apart from Roquefort and blue cheese from Corsica, which are made from sheep's milk. Blue cheese comprises some ten percent of general cheese production.
Roquefort cheese was the first cheese to have a legal protected designation of origin.
