Basmati rice and Zefat cheese salad



This tasty and refreshing rice and cheese salad is a perfect Shavuot side dish. Those who don't eat dairy products can replace the cheese with fresh tofu cubes.

Ingredients
2 purple onions, chopped
2 cups Sugat Basmati rice
1 bunch parsley, chopped
1 bunch coriander, chopped
300 grams Zefat or Bulgarian cheese, cut into small cubes
1 red pepper (sweet), sliced in circles
¼ cup olive oil
Salt and pepper
Black sesame seeds for decoration


Instructions
1.   Heat oil in a pot, add onions and fry till golden. Add rice and keep on stirring.
2. Add 3 cups of boiling water, reduce heat and cook covered for 15 minutes until rice is tender.
3. Let rice "rest" in pot for 30 minutes.
4. Add the herbs and the pepper to the rice. Add the cheese and mix gently. Add olive oil, salt and pepper, decorate with sesame seeds and serve.
